Tofu Gravy

In a process similar to making cheese, tofu is made by curdling soy milk, which comes from soybeans. The milk is coagulated using taric acid or other food acids, then pressed into bricks. As this process contains no animal by-products, neither does the tofu, which means the tofu itself is completely vegan.

Simply press down on the firm tofu and use your hands to break it apart, crushing it between your fingers until it mimics the texture of scrambled eggs. Then season with turmeric, black pepper, garlic powder, black salt (for an “egg” flavor, or use sea salt or Tamari instead), and add your favorite cooked vegetables.
